Deep Fry Promfret

INGREDIENTS
-Promfret
-Ginger
-Salt
-Flour
-Water
-Egg White

DIRECTIONS
1) Wash the promfret well and rub salt onto the promfret
2) Mix the flour and egg white
3) Coat the promfret with the egg white and flour mixture
4) Place a piece of ginger in the head of the fish
5) Make gashes on both sides of the promfret Set aside in the refrigerator for at least an hour
6) Heat a heavy bottomed pan on medium flame
7) Pour oil into the hot pan
8) Let it fry undisturbed on medium flame for 10 minutes
9) Flip & turn over the promfret on the other side, let it fry for 10 minutes more
