Hokkien Mee

Recipe serves 4 pax

Ingredients
-200g of Yellow Noodles
-150g of Thick Bee Hoon
-Bean Sprouts
-Cai Xin
-2 eggs (Beaten)
-1 tbsp light soya sauce
-1 tbsp chopped garlic
-Prawns (Steamed for 3 mins)
-Sotong (Steamed for 3 mins)
-Fish cake
-About 750 ml of stock (Pork ribs/belly, prawn shells, rock sugar/sugar cane)
-1 tbsp of fish sauce

Garnish
-Lime
-Belachan Chilli

Mummy's style of cooking
-Fry garlic in oil till fragrant
-Add in beaten eggs and light soy sauce, fry into light scrambled eggs form, scoot eggs to the side of the pan
-Add in noodles, bee hoon, beansprouts and Cai xian. Fry briefly.
-Add prawns, sotong, fish cake.
-Stir noodles well with egg.
-Add stock and fish sauce, simmer for a little while then serve with lime and belachan
